After a nice long and fun weekend of camping and physically demanding outdoor activities, we are happy to be home and back in the realm of running water and delighting in the absence of black flies. To me, one of the best parts of vacation is the enjoyment of coming back home. Now that those four loads of laundry are done and everything is put away, I wanted to make a treat for us to take to work/school tomorrow to remember our holiday and the joy of coming home. I put a poll out to the boys and this recipe for Chocolate Chip Cookies was the winner. This recipe makes about 15 cookies depending on the size of your spoons.
Chocolate Chip Cookies
Recipe Adapted from The American Heart Association Low-fat and Luscious Desserts
1/4 cup unsalted butter, softened
2/3 cup firmly packed light brown sugar
1 large egg
1/2 tsp vanilla extract
1 cup all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1/2 cup semi-sweet chocolate chips
Preheat oven to 350F. In a large mixing bowl, using an electric mixer, cream butter until smooth. Add brown sugar and beat 2 minutes. Add egg and vanilla; beat until blended.
In a small bowl, combine flour, baking soda, and salt. Add to butter mixture in two or three batches, beating or stirring in with a wooden spoon or rubber spatula just until blended.
Stir in chocolate chips.
Scoop by spoonful onto baking sheets. Bake 8 to 10 minutes. Cookies will be slightly darker around the edges and lighter in the middle. Let cool on sheets for about a minutes and then transfer to wire racks.
Each cookie contains approximately 120 calories, 2 grams of protein, 22 grams of carbohydrates, 3 grams of fat and 84 mg of sodium.
