My husband, son and I are gearing up for a camping trip. I wanted to make something nutritious yet easy to grab on the go. The key to camping is being prepared; prepared for anything that might come up. When my husband and I were just starting out, we went camping every year in June. It happened to coincide with a motorcycle event in our hometown. We would drive a couple hours north to quiet our minds and exercise our bodies. Days of hiking and kayaking followed by nights of camp fires and smores covered faces. There’s nothing quite like it.
Now we get to enjoy it with our little boy and beagle pup. It’s even more fulfilling sharing it with them.
Getting back to nature. No TV, no email, no interruptions. Just us and the great outdoors. I can’t wait!
These granola bars are packed with protein and complex carbs.
Adapted from Gourmet Nutrition by Dr. John M. Berardi and Dr. John K. Williams
- 2 cups rolled oats
- 1/2 cup crushed walnuts
- 1/2 cup raisins
- 4 scoops vanilla whey
- 2 Tbsp honey
- 1/4 tsp salt
- 1/4 tsp vanilla extract
- 1/2 cup maple syrup
In a large bowl combine the oats, walnuts, flax seeds, raisins and whey. Add the honey, syrup, vanilla and salt. Stir until combined. It will seem too dry but just keep mixing until everything is mixed.
Coat an 8×8 baking dish with olive oil then press the mixture into the bottom of the dish.
Bake in a 350F oven for 10 minutes. Let cool and cut into bars. Enjoy!
What food do you feel is a must when camping? Besides the smores, of course :)
P.S. These were not a huge hit…no one really liked them, especially when they were situated next to the graham crackers and chocolate.
