I’m sorry that I haven’t posted in a while. A couple of things have been holding me back. First, I have been having a love affair. A love affair with the state of Hawaii. I have been studying the geography and the history of the islands. I have had enough of this cold, wintery weather of New England. I want to feel the warm sun on my face and the trade winds blowing in from the ocean through the palm trees.
Another reason I have been neglecting you, is the fact that I am trying to lose a couple of extra pounds. It is very hard to do that when I have treats calling out to me from the kitchen counter. I only have so much will power! I have been cutting out sugar and recording my calories in and calories out using myfitnesspal.com.
But, you must enjoy each day that the good Lord blesses you with. Ethan’s school does a Butter Braid fundraiser each year. I decided to make my own version of a Braid Bread. I am using Granny Smith apples with cinnamon and sugar inside.
I started with the pizza dough I made yesterday. It’s super easy.
- 1 package of active dry yeast
- 1 cup + 1 Tbs. water
- 3 cups flour
- 1/4 tsp salt
- 1/4 tsp sugar
Place the yeast and water in a bowl. Add the flour, salt and sugar. Using a wooden spoon, stir to combine. It will look a bit shaggy but using your hands, knead the dough slightly right in the bowl. Let rest for 2 hours before using. Makes 2 pizzas or 1 pizza and 1 braid bread or 12 cinnamon buns.
The filling is simply apples, cinnamon and sugar. It really doesn’t get much better than that combination.
Apple Braid Bread
- 3 medium sized apples
- 2 Tbs. sugar
- 1 tsp. cinnamon
- 1 Tbs. butter, melted
- 1/3 cup confectioners sugar
- 1 Tbs. milk (depending on desired consistency)
- 1/2 tsp. vanilla
- pinch of nutmeg
Roll the dough very thin. Using a pizza cutter, make the slits that will be the braid.
Preheat the oven to 350F. Combine the apples, cinnamon and sugar in a dish and place in the oven for 10-15 minutes to soften.
Place the softened apples in the middle of the dough and form the braid. Place on a greased cookie sheet.
Brush the melted butter on top and sprinkle with a dusting of sugar, if desired.
Bake for 25 minutes. While the braid is baking, combine the ingredients for the icing.
When slightly cool, drizzle with icing, slice and enjoy.
